Being a newlywed has put my cooking skills to the test. Now, if you ask my family, they'll tell you I've never cooked a day in my life. I'm an awesome "assistant/sous chef". :) In reality, everyone in my family is an amazing cook- from my mom to my sister and even both my brothers. Sooooo...why would I eat my food when I can eat their's?!?!?! I'm not crazy! Before I got married, I'm sure my family feared for Wyatt's future food adventures. I've learned to cook 3 different Filipino dishes while I was growing up and can only cook them for a family of 6. In the beginning I think Wyatt might have enjoyed this, but when one dish lasted for several meals, I think he got bored. One chicken adobo dish lasted for both our dinners and the next day's lunch AND dinner. I'm still learning to cook for 2 people and have gotten better. Another challenge for me is cooking American food. Filipino food always requires rice and that's it. According to Wyatt, American meals are always meat, carb and veggies. So, I'm working on it. Now that we're 107 days into married life, I can update you all on the fact that my cooking skills are WAY better than I thought they were. I think the tough part for me is trying to cook something new everyday and cooking American food.
Wyatt says he likes everything I cook (maybe because he wants to eat everyday and if he said otherwise, he'd be stuck making the meals), but I thought I'd put it to the real test. For Mama's birthday, I decided to make an entire meal for her. I had a meal consisting of steak with brandied mushrooms and cream sauce, parmesan asparagus, garlic potatoes, and white chocolate bread pudding planned out for two weeks, only to realize 3 days prior to the actual dinner, that it would fall on a Friday during Lent. If you're Catholic, you know what this means- NO MEAT ON FRIDAYS! AAAAAHHH! I thought to myself, "What kind of Catholic are you that you can't remember this!?!!? Think fast, Kathleen!" So, I did. Fish = healthy. This was probably the healthiest meal you could have had. I did not enjoy this, but Mama, Papa and Wyatt said they all did. Mama could have sincerely liked it. She's healthy like that. Wyatt liked it- for all the reasons stated in the beginning of this paragraph and Papa was probably more excited that I cooked, that it overpowered his taste buds. Either way, this meal turned out pretty good. It was a Mediterranean feast!
